TALAM MUTIARA PANDAN



This was my trial and error...I stumbled into Table for 2 blog and saw this beautiful talam made by the blog owner Wendy. By the look of the talam I knew it was a elastic type..I love elastic talam, the Nyonya and the Chinese are  slightly elastic as compared to the Malay's talam so this time around I'm moving away from my basic talam and tried Wendy's recipe. I made a slight tweak by adding some sago on the top layer and named this talam, Talam Mutiara Pandan, well the sago symbolised pearl here.

If you plan to make this talam I would suggest that you use the normal baking sheet, these small tea cup may have a slight problem where they tent to make a hole in the center like the kuih lompang...so could be slightly tricky when you want to put the second layer. Just to cautious you...anyway I managed to get it done.

TALAM MUTIARA PANDAN


INGREDIENTS

Ingredients A
50 g pearl sago


Cooked sago and drain water


Ingredients B
100gm rice flour
30gm tapioca starch
20gm green bean flour
300gm sugar
700ml pandan juice
½ tsp alkaline water

Combine all (B) ingredients and cook over low heat, stirring slowly all the time until it thickens slightly. Pour into a 8 inch round pan or 7 inch square pan. Steam batter for 20 minutes. Batter is cooked when firm to the touch.

Ingredients C
20gm rice flour
15gm green bean flour
¼ tsp salt
300ml coconut milk (extract from 1 coconut + water)

Combine all (C) ingredients and cook over low heat, stirring slowly all the time until it thickens slightly. Pour (C) batter over cooked (B) sprinkle the cooked sago and steam on medium heat for 15 minutes.
Cool thoroughly at room temperature before cutting.

Chilling in fridge may cause the upper layer to be harder due to the high concentration of coconut milk(fat content high).



Sedap talam ini, saya ambil resipi dari Wendy, Table for 2 blogspot. Talam ini adalah jenis yang sedikit liat..cukup syok makanya. Saya suka talam yang liat-liat sedikit..sedikit aje...jangan banyak=banyak liat saya tak suka, sukatan Wendy ini memang cantik... saya gunakan acuan lompang untuk kukus talam dan taburkan sedikit sago merah yang sudah dimasak di lapisan atas menjadikanya mutiara kecil bertaburan. 

Kalau ada yang berminat hendak membuat talam ini saya cadangkan gunakan loyang biasa aje..acuan lompang ini boleh juga berlubang menjadi macam kuih lompang. Pada mulanya berpeluh juga saya dibuatnya. Agak rumit sedikit cara ini apabila hendak memasukkan lapisan kedua....apa pun ia tetap jadi tetapi cuma leceh sedikit.
